Delicious, Lightweight, Just Add Water


If you are getting ready to go camping for a weekend or going on an all day adventure, you should carefully plan what you will eat once you arrive. I get SO hungry on the trail, and by the time camp is set up, I could eat a three course dinner. Unfortunately being miles away from home, in the middle of a forest that is not really an option. Personally, I do not like eating peanut butter sandwiches, or ramen noodles all the time enough to only bring those in my pack. Most canned foods are way too heavy, and will only leave more trash to carry. Assuming you are following the rules and not leaving your trash behind :). You need something lightweight, freeze dried is usually the way to go. I never really thought a freeze dried meal would taste like a homemade, authentic, hearty dinner. 

When I tried Mountain House brand of freeze dried Chicken Fried Rice with veggies, I was WOWED! It only called for two cups of boiling water, which was very easy since our campsite was next to the Middle Saluda River. The water comes from natural springs throughout the upstate mountains of South Carolina, and lower mountains of North Carolina. After adding the water, we sealed the bag shut for about ten minutes, opened it to stir, and closed it back for another ten minutes. When Derek and I opened the package we were beyond grateful for what we saw. Long grain rice, white meat chicken, scrambled eggs, onions, mushrooms, green peas, red peppers, and carrots!! It looked like homemade Chinese takeout!! We grabbed our spoons, and after the first bite, we could not eat it fast enough. One package was 2.5 servings and 11 grams of protein, it was perfect for the two of us, we even saved some for a snack later on. 

We also bought a Chili Mac that was equally as tasty, we stopped at the last campsite while hiking our way out of Caesars Head, made a fire, boiled the water, and by the time I had Rocky fed and hydrated our meal was ready. It can almost compete with my homemade chili beans (which is to die for btw!) These meals are really affordable, and high quality, which is what I always look for.

My Essential Outdoor Items

When it comes to hiking, and camping I want to be as comfortable as possible, without carrying too much weight and unnecessary items.
